Project Scope

CWE performs onsite Fats, Oils, and Grease (FOG) inspections of permitted food handling facilities.  These efforts ensure compliance with the City of Glendora’s FOG ordinance and minimize potential Sanitary Sewer Overflows (SSOs). Between 2013 and 2019, CWE performed 1,114 FOG inspections at more than 440 facilities citywide.

FOG inspections include kitchen Best Management Practices (BMPs). Methods include using dry wiping techniques, keeping maintenance logs for grease trap inceptors, grease recycling, exhaust system filter cleaning, posting “No Grease” signs and kitchen BMPs fact sheets.

CWE provides owners and operator personnel with targeted educational materials.  City staff, food handling facility owners, and hands-on operators are given live FOG Control Program training.  These efforts improve existing practices and guide future FOG management decisions.  The education efforts are documented to establish milestones in each business’s compliance efforts.

In addition to a facility’s main work areas, rooftops and the area’s catch basins are inspected for oil and grease.  Upon completion of the inspections, results are given to the facility manager.  Recommendations for improvement are also provided.  Observational photography is taken to assist with follow-up inspections.

These training efforts introduce the importance of the citywide compliant FOG Control Program. Businesses are properly introduced to their responsibilities in maintaining the city’s FOG standards.

CWE completed a Program Effectiveness Assessment of the City’s implementation of the Stormwater Management Plan.  An assessment of the FOG Control Program was conducted to determine SSO requirement compliance.
